Method
- 1
Oil a sheet of baking parchment on a heatproof board, plus a flat metal spoon and the bottom of a small cookie cutter. Have a wooden skewer ready.
- 2
Spoon 3 tablespoons of sugar into a small ladle or metal spoon. Hold it over a low heat on the hob, moving it slowly.
- 3
The sugar melts to clear syrup, then turns to amber. Take it off the heat. Stir with the skewer for a few seconds, adding a tiny pinch of bicarbonate. It will foam up and turn pale gold. This takes about 3 minutes.
3 min - 4
Tip it at once onto the parchment. Press flat with the oiled spoon to a disc about 7 cm wide, then press the cutter firmly into the top to stamp a shape. Do this within 10 seconds before it sets.
- 5
Leave for 3 minutes to harden. Repeat with the remaining sugar, 3 more times. Wash up with hot water. Careful, hot sugar causes bad burns, so keep children well away.
