Method

  1. 1

Boil the potatoes in salted water for 15 minutes until tender. Drain, then mash with the dairy free spread, turmeric and salt.

    15 min
  2. 2

Heat the oven to 200°C (180°C fan).

  3. 3

Warm your ready made curry base sauce (see the base recipe) with the coconut milk in a pan over a medium heat. Stir in the cornflour paste and bubble for 2 minutes until thickened.

    2 min
  4. 4

Take off the heat and fold in the cod, prawns, peas and parsley. Tip into a baking dish.

  5. 5

Spoon the mash over the top and rough up the surface with a fork.

  6. 6

Bake for 30 minutes until the top is golden and the sauce is bubbling at the edges. Rest for 5 minutes before serving.

    30 min

Tips

  • Add the raw fish to a hot sauce but keep the sauce off the heat. It finishes cooking in the oven and stays tender.
  • Let the sauce cool slightly before adding the mash so the topping does not sink.

Storing and freezing

Keeps 1 day in the fridge, cooled within 1 to 2 hours. Reheat until steaming hot all the way through. Freezing is possible for up to 1 month but the fish texture softens.

Questions

Can I use smoked haddock?

Yes. Use half smoked haddock and half cod, and leave out the extra salt, as smoked fish is already salty.

Can I make it ahead?

Yes, assemble up to 1 day ahead and chill. Bake for 40 minutes from cold, until steaming hot in the centre.
