Method

  1. 1

Mix the flour and the first teaspoon of salt. Add the cold water, 1 tbsp oil and the vinegar and knead for 5 minutes into a firm, smooth dough. Wrap and rest for 30 minutes.

  2. 2

Mix the lamb, onion, 60 ml cold water, second teaspoon of salt, pepper, cumin and parsley with your hands for 2 minutes. The water makes the filling juicy.

  3. 3

Divide the dough into 8 balls. Roll each into a very thin circle about 20 cm wide.

  4. 4

Spread a thin layer of filling over one half of each circle, leaving a 1 cm edge. Fold the plain half over and press the edges firmly shut, crimping with a fork.

  5. 5

Heat the frying oil in a wide, deep pan over a medium high heat until a scrap of dough sizzles at once. Fry the chebureki one or two at a time for 3 minutes each side, until blistered and deep golden.

  6. 6

Drain on kitchen paper and serve straight away with lemon wedges or a tomato and onion salad.
