Method
- 1
Put the beef and salt in a pan and pour over 400 ml of your ready made birria adobo and consomme (see the base recipe). Bring to a simmer, cover and cook gently for 1 hour 45 minutes, turning once, until the beef shreds easily.
105 min - 2
Lift out the beef, shred it and moisten it with a few spoonfuls of broth. Keep the rest of the broth warm for sipping.
- 3
Warm the tortillas in a dry pan and wrap them in a tea towel.
- 4
Heat the oil in a frying pan over a medium heat and soften the onion and chilli for 3 minutes.
3 min - 5
Beat the eggs with a pinch of salt and pour into the pan. Stir slowly for 1 to 2 minutes until just set but still creamy.
1 min 30 s - 6
Fold the shredded beef through the eggs. Spoon into the tortillas and finish with coriander and lime.
Tips
- Stir the eggs over a medium heat, not a high one, and take them off just before they look done.
- Skirt steak shreds in under 2 hours and suits a quick weekend breakfast.
- Use leftover birria beef if you have it. Skip the braising and warm 300 g of beef through in a little broth.
- Add a spoon of the red fat to the eggs for a richer taste and a red tinge.
Storing and freezing
Eat the eggs straight away. Keep the shredded beef and broth in the fridge for up to 3 days and reheat until steaming hot all the way through.
Questions
Can I use leftover beef?
Yes. Use about 300 g of shredded cooked birria beef and add it to the eggs at the end.
Can I make this ahead?
Braise the beef up to 3 days ahead, then scramble the eggs fresh. Scrambled eggs do not reheat well.
What else goes well with it?
Refried beans, sliced avocado and a spoonful of salsa verde. Keep it simple with a hot cup of the broth on the side.
