Method

  1. 1

Stir the 1 tsp salt into the warm water. Put the maize flour in a bowl with the olive oil, pour in the water and mix with your hands. Leave for 5 minutes, then knead for a minute. The dough should be soft and smooth like play dough. Add water a tablespoon at a time if it cracks.

  2. 2

Divide into 6 balls. Flatten each between your palms into a disc about 9 cm wide and 1.5 cm thick. Smooth any cracks round the edges with wet fingertips.

  3. 3

Heat the sunflower oil in a heavy frying pan over a medium heat. Cook the arepas in batches for about 5 minutes each side, until golden with a light crust.

  4. 4

Heat the oven to 200°C (180°C fan). Move the arepas to a tray and bake for 10 minutes, until firm and they sound hollow when tapped.

Meanwhile mash the avocados with the lime juice, 0.5 tsp salt and coriander.

Split each hot arepa along one side with a knife like a pitta pocket and fill with the avocado. Eat straight away.
