Method

  1. 1

Mix the sugar, chilli powder, lime zest and salt on a wide plate. Toss the mango with the lime juice in a bowl and chill.

  2. 2

Spoon your ready made churro dough (see the base recipe) into a piping bag with a large star nozzle. Heat the oil in a deep pan, no more than one third full, to 180 degrees C.

  3. 3

Pipe 12 cm lengths into the oil, snipping with oiled scissors. Fry 3 or 4 at a time for 3 to 4 minutes, turning, until deep golden.

Drain on kitchen paper for 20 seconds, then roll in the chilli lime sugar while still hot so it sticks.

  5. 5

Serve the churros at once, with the cold mango alongside for dipping and nibbling.

Tips

  • Ancho chilli powder gives gentle heat and fruitiness; use hot chilli powder or cayenne sparingly for more kick.
  • Add the lime zest to the sugar just before serving, as the oils fade quickly.
  • No fresh mango? Use thawed frozen mango chunks, drained well.

Storing and freezing

Eat straight away. The mango and lime salad keeps 1 day in the fridge but the churros are best fresh from the pan.

Questions

Is this vegan?

Yes. The churro dough is made with water, oil, flour, sugar and salt, and the coating and fruit are all plant based.

How hot is it?

Mild to medium. Start with 1 tsp mild chilli powder; it adds warmth without burning, and the sugar and lime balance it.

Can I use Tajin?

Yes. Swap the chilli, zest and salt for 1 tbsp Tajin seasoning mixed with the sugar. Check the label if you need gluten free.
