Method

  1. 1

Heat the oven to 220°C (200°C fan) and put a large baking tray inside to get hot.

  2. 2

Cut the potatoes into chips about 1.5 cm thick. Rinse them under cold water, then dry thoroughly on a clean tea towel.

  3. 3

Put the chips in a large bowl with the oil, paprika and salt and toss until evenly coated.

  4. 4

Tip them onto the hot tray in a single layer. Bake for 40 to 45 minutes, turning halfway, until golden and crisp outside and soft in the middle.

  5. 5

Meanwhile, stir the garlic into your ready made homemade mayonnaise (see the base recipe) and chill.

  6. 6

Serve the hot chips straight away with the garlic mayonnaise for dipping.

Tips

  • Dry chips well. Wet chips steam and go limp instead of crisping.
  • Use a very hot tray and do not overcrowd it. Use two trays if needed.
  • Parboil the chips for 5 minutes before roasting for extra fluffy insides.

Storing and freezing

Eat straight away. The garlic mayonnaise keeps 2 days in the fridge, so use up quickly.

Questions

Which potatoes are best?

Floury potatoes such as Maris Piper or King Edward give fluffy insides and crisp outsides. Waxy potatoes stay firm and do not go crisp.

Can I use an air fryer?

Yes. Cook at 200C for 20 to 25 minutes, shaking halfway, using 1 tablespoon of oil. Do not overload the basket.

Are they gluten free?

Yes. Potatoes, oil and mayonnaise are gluten free, though check the paprika and mayonnaise labels. They are dairy free and nut free.
