Method

  1. 1

Make the brine: stir the salt, half the garlic, the lemon juice and water together until the salt dissolves. Make the chimichurri: mix the parsley, remaining garlic, 1 tsp oregano, chilli flakes, vinegar, oil and shallot in a bowl. Leave it to sit.

  2. 2

Set up a barbecue for indirect heat at around 150 C, or heat the oven to 150°C (130°C fan). Season the goat with pepper and the rest of the oregano.

  3. 3

Put the goat on the barbecue away from the coals, or on a rack over a tin in the oven. Close the lid and cook for 1 hour.

  4. 4

Brush the goat with the brine every 30 minutes and turn it each time. Cook for 2 hours more, until the meat is very tender and nearly pulling from the bone.

  5. 5

Turn the heat up or move the meat nearer the coals for the last 10 minutes to crisp and darken the outside.

  6. 6

Rest for 15 minutes under foil. Carve or pull into pieces and serve with the chimichurri spooned over.
