Method
- 1
Pour your ready made pozole verde base (see the base recipe) into a wide pan and simmer for 8 minutes, until slightly thickened.
8 min - 2
Meanwhile, heat the oil in a frying pan and fry the eggs, keeping the yolks runny.
- 3
Tip your ready made totopos (see the base recipe) into the green sauce and fold for 30 seconds, just until coated but still a little crisp.
- 4
Divide between plates and top each with a fried egg, crema, queso fresco, onion and coriander. Serve at once.
Tips
- Work quickly once the chips go in. Soggy chilaquiles are a matter of minutes.
- Shredded chicken or leftover meat folded in makes a bigger meal.
- Pickled red onions on top add a sharp bite.
Storing and freezing
Best eaten straight away. Keep leftover sauce in the fridge for 3 days.
Questions
Chilaquiles verdes or rojos?
Both are traditional. Green ones taste fresh and tangy from tomatillo, red ones are earthier. Pick whichever you like.
How do I keep the chips crisp?
Add them to the hot sauce at the last second and serve immediately. Thicker totopos hold their crunch longer.
Can I make it without eggs?
Yes. Top with shredded chicken or refried beans instead.
