Method

  1. 1

Rinse the sushi rice in cold water until it runs almost clear. Put it in a pan with the 300 ml water, bring to the boil, cover and cook on the lowest heat for 12 minutes. Leave covered off the heat for 10 minutes.

  2. 2

Stir the tamari, mirin, honey, vinegar, ginger and garlic together. Mix the cornflour with the 1 tablespoon of water.

  3. 3

Steam or boil the broccoli, carrots and edamame together for 3 to 4 minutes, until just tender but still bright. Drain and cool.

  4. 4

Heat the oil in a large frying pan over a high heat. Fry the chicken for 6 to 7 minutes, turning, until golden with no pink inside.

  5. 5

Pour in the sauce and bubble for 2 minutes. Stir in the cornflour mix and cook for 1 minute until glossy and thick enough to coat the chicken.

  6. 6

Divide the rice between 4 boxes, add the chicken and sauce, the vegetables and the cucumber, and sprinkle with sesame seeds. Let everything cool before putting on lids.

  7. 7

Keep chilled for up to 3 days. Rice goes firm in the fridge, so microwave the box without the cucumber for 2 minutes with a splash of water on the rice, until steaming hot all the way through. Not suitable for freezing once assembled.
