Method
- 1
Heat the oven to 220°C (200°C fan). Toss the peppers, onion and garlic with the olive oil, paprika, cumin and a pinch of salt on a large tray.
- 2
Roast for 35 to 40 minutes, until the peppers are soft and lightly charred.
38 min - 3
Squeeze the garlic from its skins. Tip everything on the tray into a large pan with the tomatoes and your ready made vegetable stock (see the base recipe).
- 4
Bring to the boil, then simmer for 10 minutes.
10 min - 5
Add 100 g of your ready made hummus (see the base recipe) and blend with a stick blender until completely smooth. Add the lemon juice and season to taste.
- 6
Ladle into bowls and top each with a spoonful of the remaining hummus, swirled with a spoon.
Tips
- Roast the peppers until the edges blacken a little. The char gives the soup a smoky depth.
- Add a pinch of chilli flakes or a spoonful of harissa for gentle heat.
- If the soup is too thick, add a splash of stock or water and warm through.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 3 days. Freeze in portions for up to 3 months. Reheat until steaming hot all the way through, adding the hummus swirl fresh.
Questions
Why add hummus to the soup?
Blended in, hummus adds body and a creamy texture without dairy. It also adds a little sesame and lemon flavour.
Can I use jarred roasted peppers?
Yes. Use about 500 g drained jarred roasted peppers and skip the roasting. The soup will be a little less smoky, so add extra paprika.
