Method

  1. 1

Put the pork in a bowl with 60 ml of your ready made char siu marinade (see the base recipe). Stir, cover and leave for 30 minutes in the fridge, or up to 4 hours.

  2. 2

Use rice that was cooled within 1 hour of cooking and chilled. Break up any clumps with your fingers.

  3. 3

Heat 1 tbsp of the vegetable oil in a wok over a high heat. Stir fry the pork with its marinade for 4 minutes until cooked through and sticky. Tip onto a plate.

Add the remaining oil, pour in the eggs and scramble for 30 seconds. Add the rice and fry for 3 minutes, pressing it against the wok so it toasts.

  5. 5

Add the peas and cook for 2 minutes, then return the pork and add the remaining 20 ml of marinade. Toss until hot all the way through.

  6. 6

Stir in the spring onions and sesame oil, taste, and serve with the chilli oil to spoon over.

Tips

  • Cold, day old rice fries best because the grains are dry and separate. Freshly cooked rice turns mushy.
  • Keep the wok very hot and cook in two batches if your pan is small, otherwise the rice steams instead of frying.
  • Use up leftover roast char siu instead of raw pork: slice it, skip step 1 and add it with the rice.

Storing and freezing

Best eaten straight away. Cool leftovers within 1 hour, keep in the fridge for up to 1 day and reheat once only until piping hot, because reheated rice carries a risk of food poisoning.

Questions

Can I make it egg free?

Yes. Leave out the eggs and add 100 g extra peas or diced carrot. The dish is still rich and sticky from the marinade.

Is fried rice safe to reheat?

Only if the rice was cooled quickly, kept in the fridge and reheated once until steaming hot all the way through. Never leave cooked rice at room temperature for more than an hour or two.

How hot is the chilli oil?

It is a spoon of heat on the side, so each person controls their own. Leave it out for children.
