Method

  1. 1

Warm your cilantro lime rice (see the base recipe) in a covered pan or microwave until steaming hot all the way through. Keep covered.

  2. 2

Cook your homemade Mexican chorizo (see the base recipe) in a cold large frying pan for 8 minutes, breaking it up, until browned and cooked through.

  3. 3

Push the chorizo aside. Add the oil and the prawns and cook for 2 minutes on one side until pink. Turn, add the garlic and cook for 1 minute more.

  4. 4

Add the tomatoes and lime juice and bubble for 2 minutes until saucy and the prawns are fully pink and cooked through.

  5. 5

Taste and add salt if needed. Stir through the coriander.

  6. 6

Spoon the rice into bowls and top with the prawns and chorizo.

Tips

  • Pat the prawns dry for a good sear, and do not overcook them or they turn rubbery.
  • Prawns are done when pink and curled into a loose C shape, not tight rings.
  • Do not reheat leftover prawns, as shellfish reheats poorly.

Storing and freezing

Best eaten straight away. Leftovers keep in the fridge for 1 day once cooled within 1 hour, and rice must only be reheated once, until steaming hot throughout.

Questions

Can I use cooked prawns?

Yes, but add them at the very end for just 1 minute so they do not toughen. Raw prawns give far better flavour from the chorizo fat.

Can I use frozen prawns?

Yes. Thaw them fully in the fridge overnight, drain and pat dry thoroughly before cooking.

Is it gluten free?

Yes, as written. It is also dairy free, egg free and nut free, but it contains shellfish.
