Method

  1. 1

Heat the oven to 220°C (200°C fan). Toss the chips with the olive oil and salt on 2 large trays, spread out so they do not touch.

  2. 2

Roast for 40 minutes, turning once, until golden and crisp.

  3. 3

Meanwhile, heat the vegetable oil in a frying pan and brown the chicken with the garam masala for 7 minutes.

    7 min
  4. 4

Add your ready made makhani base (see the base recipe) and simmer for 8 minutes until thick and the chicken is cooked through.

    8 min
  5. 5

Pile the chips into a large ovenproof dish, spoon over the chicken and sprinkle with mozzarella.

  6. 6

Return to the oven for 5 minutes to melt the cheese.

    5 min
  7. 7

Top with the pickled red onions (see the base recipe), yoghurt and coriander and eat straight away.

Tips

  • Do not overcrowd the chips. Use 2 trays so they crisp rather than steam.
  • Soak cut chips in cold water for 20 minutes, then dry well, for an extra crisp finish.
  • Make the sauce thick so it clings to the chips and does not make them soggy.

Storing and freezing

Best eaten immediately. Keep leftover chicken 3 days in the fridge and reheat until steaming hot. The chips will not keep their crunch.
