Heat 1 tbsp oil in a large frying pan over a high heat. Fry the mushrooms in two batches for 6 minutes each until deeply browned and the liquid has gone.

    12 min
  2. 2

Return all the mushrooms to the pan with the garlic and cook for 1 minute.

    1 min
  3. 3

Pour in your ready made chile colorado sauce (see the base recipe) and simmer for 5 minutes until thick and glossy. Season with salt.

    5 min
  4. 4

Warm your corn tortillas (see the base recipe) in a dry pan for 20 seconds a side.

  5. 5

Fill each with mushrooms, your pickled red onions (see the base recipe), avocado and coriander, and serve with lime.

Tips

  • Do not crowd the pan or the mushrooms steam instead of browning.
  • Salt only at the end. Early salt draws out water and slows browning.
  • Oyster or portobello mushrooms also work and give a meatier bite.

Storing and freezing

Keep the cooked mushrooms in the fridge for up to 3 days. Reheat until steaming hot all the way through. Fill tortillas fresh.

Questions

Are these tacos vegan?

Yes. They use mushrooms, plant based sauce and corn tortillas. Check your tortillas and stock labels.

Can I add beans?

Yes. Stir in a tin of drained black or pinto beans with the sauce for a heartier filling.

Can I use a different mushroom?

Yes. Oyster, portobello, king oyster and shiitake all work. Slice thicker types so they cook evenly.
