Method

  1. 1

Heat the oven to 200°C (180°C fan). Scrub the potatoes, prick them all over, rub with the olive oil and salt and bake directly on the shelf for 1 hour 10 minutes until the skin is crisp and the middle is soft.

    70 min
  2. 2

About 20 minutes before the end, heat the vegetable oil in a frying pan. Brown the chicken with the garam masala for 7 minutes.

    7 min
  3. 3

Add your ready made makhani base (see the base recipe) and simmer for 8 minutes until thick and the chicken is cooked through.

    8 min
  4. 4

Split the potatoes open and fluff the insides with a fork.

  5. 5

Spoon over the chicken, then top with the pickled red onions (see the base recipe), yoghurt and coriander and serve.

Tips

  • Bake potatoes directly on the oven shelf for the crispest skin.
  • Use floury potatoes such as Maris Piper or King Edward for a fluffy middle.
  • Make the filling thick enough to sit on the potato. Reduce it a little more if it runs.

Storing and freezing

Keeps the chicken filling 3 days in the fridge. Reheat until steaming hot all the way through and bake fresh potatoes if you can. Leftover potatoes keep 2 days in the fridge, reheated until steaming hot.

Questions

Can I cook the potatoes faster?

Yes. Microwave for 8 minutes, then crisp in a hot oven for 15 minutes. The skin will not be quite as crisp.

Can I use sweet potatoes?

Yes. They need about 50 minutes at the same heat and pair well with the spiced chicken.

Can I make it vegetarian?

Yes. Use tinned chickpeas or cubed paneer instead of the chicken.
