Method

  1. 1

Boil the potatoes in salted water for 8 minutes until almost tender, then drain well and leave to steam dry.

  2. 2

Cook the onions in 3 tablespoons of the oil over a medium heat for 10 minutes until soft and golden. Add the potatoes, salt, pepper and paprika and mash roughly with a fork, leaving some chunks. Stir in the parsley and cool for 10 minutes.

  3. 3

Heat the oven to 200°C (180°C fan). Lay a sheet of filo on the work surface, keeping the rest under a damp tea towel, and brush with oil. Overlap a second sheet along the long edge and brush that too.

  4. 4

Spoon a third of the filling in a line along the nearest edge and roll up tightly into a long sausage.

  5. 5

Coil it into a 24 cm round oiled tin. Repeat with the remaining filo and filling, joining the rolls end to end into one spiral.

  6. 6

Brush the top with oil and bake for 35 to 40 minutes until golden and crisp.

    38 min
  7. 7

Sprinkle the hot pie with the hot water, cover with a clean tea towel and leave for 10 minutes. This softens the layers. Cut into wedges and serve warm.
