Method

  1. 1

The day before, put the salt cod in a large bowl of cold water and leave in the fridge for 24 to 36 hours, changing the water 3 times. Drain well.

  2. 2

Put the cod in a pan with the milk, water, bay, thyme and the 2 whole garlic cloves. Heat until barely simmering and poach gently for 10 minutes, without letting it boil hard.

  3. 3

Lift out the cod, reserving the milk. Pull off the skin, flake the flesh and remove any bones.

  4. 4

Meanwhile, boil the potatoes in unsalted water for 15 minutes until soft. Drain and leave to steam dry for 2 minutes.

  5. 5

Warm the olive oil with the crushed garlic for 2 minutes. Mash the potatoes in a large bowl, add the cod, then beat with a wooden spoon, adding the warm oil and about 100 ml of the poaching milk a little at a time until creamy but still slightly rough.

Season with the lemon juice, nutmeg and white pepper. Taste before adding any salt, as the cod is already salty. Serve warm with the toasts.
