Method
- 1
Mix the flour, turmeric and a pinch of salt with the 3 tablespoons of oil and the 150 ml water to make a soft dough. Knead for 5 minutes, cover with oil and rest for 1 hour.
60 min - 2
Meanwhile, simmer the chana dal in the 450 ml water for 30 minutes until very soft. Drain well and mash to a coarse paste.
30 min - 3
Return the dal to the pan with the jaggery and cardamom. Cook on a medium heat for 10 to 12 minutes, stirring, until thick enough to hold its shape. Cool, then roll into 10 balls.
11 min - 4
Divide the dough into 10 pieces. Flatten each in your palm, put a filling ball in the middle and seal the dough around it.
- 5
Roll each ball out gently between 2 oiled sheets of baking paper to a 14 cm circle, taking care not to tear it.
- 6
Heat a dry frying pan on a medium heat. Cook each flatbread with a little oil for 1 to 2 minutes on each side until golden with brown spots. Serve warm.
