Method

  1. 1

Heat the oven to 210°C (190°C fan). Line a large baking tray with foil and set a rack on top if you have one.

  2. 2

Pat the wings very dry. Toss them with the baking powder, salt and oil until evenly coated.

  3. 3

Spread the wings in a single layer. Bake for 30 minutes, turn them over, then bake for 15 minutes more until crisp and golden.

  4. 4

Warm your ready made black bean sauce (see the base recipe) in a large pan until bubbling and slightly reduced, about 3 minutes.

    3 min
  5. 5

Toss the hot wings in the sauce until glossy. Check that the thickest wing is cooked through with no pink and the juices run clear.

  6. 6

Scatter with the spring onions, sesame seeds and chilli and serve warm.

Tips

  • Dry wings crisp best. Leave them uncovered in the fridge for an hour after patting dry if you have time.
  • Use gluten free baking powder if you are coeliac, as some brands contain wheat starch.
  • Keep sauce aside for dipping. Never reuse sauce that touched raw chicken unless it has boiled hard.

Storing and freezing

Keeps up to 3 days in the fridge once cooled within 2 hours. Reheat in a hot oven until steaming hot all the way through. Freeze for up to 2 months.

Questions

Why add baking powder?

It raises the pH of the skin so it browns and crisps in the oven without deep frying. Use aluminium free baking powder if you can find it, and not baking soda.

Can I cook them in an air fryer?

Yes. Cook at 190C for 20 to 25 minutes, shaking halfway, then toss in the sauce.

Can I use drumsticks instead?

Yes. Allow 45 to 55 minutes in the oven and check that they are cooked through at the thickest part.
