Method
- 1
Cook the rice following the packet instructions, then cover and keep warm.
- 2
Heat 1 tbsp oil in a large frying pan or wok over a high heat. Add the king trumpet mushrooms and cook for 5 minutes without moving them much, until deep golden.
5 min - 3
Add the remaining oil and the shiitake. Fry for 3 minutes more.
3 min - 4
Stir in your ready made black bean sauce (see the base recipe) and 4 tbsp water. Simmer for 2 minutes until the sauce coats the mushrooms.
2 min - 5
Add the pak choi, cover and cook for 2 to 3 minutes until just wilted but still bright.
2 min 30 s - 6
Spoon over the rice and top with the spring onions and sesame seeds.
Tips
- Do not crowd the pan. Mushrooms should brown first, as they will release water and steam if packed in.
- Scoring king trumpet mushroom rounds in a crosshatch pattern helps them absorb the sauce.
- Add a spoon of Chinese chilli oil on top for heat.
Storing and freezing
Keeps up to 3 days in the fridge once cooled within 2 hours. Reheat until steaming hot. Freeze without rice for up to 2 months.
