Method

  1. 1

Heat the oven to 180°C (160°C fan) and line two baking trays with baking paper.

  2. 2

Mix the flour, baking powder and salt.

  3. 3

Beat the butter and caster sugar until pale and fluffy. Beat in the eggs one at a time, then the vanilla and lemon zest.

  4. 4

Fold in the flour in two parts, alternating with the milk, to make a thick, soft batter.

  5. 5

Drop 10 large spoonfuls of batter, each about 4 tbsp, well apart on the trays and flatten the tops slightly. Bake for 14 minutes until pale and just golden underneath. Cool completely on a rack.

  6. 6

Mix the white icing sugar with the hot water and lemon juice to a thick, spreadable icing. Spread it over half of each cookie, flat side up, and leave to set for 10 minutes.

  7. 7

Sift the cocoa into the remaining icing sugar, mix in the hot water and spread over the bare half. Leave to set for 30 minutes.
