  1. 1

Heat the oven to 180°C (160°C fan). Line a large baking tray with baking paper. Toast the almonds on a tray for 6 minutes until they smell nutty, then leave to cool.

  2. 2

Mix the flour, sugar and baking powder in a bowl. In a jug, beat the eggs with the lemon zest and vanilla.

  3. 3

Pour the egg into the flour and stir to a stiff, sticky dough. Fold in the cooled almonds.

  4. 4

With floured hands, shape the dough into two logs about 25 cm long and 6 cm wide. Lay them well apart on the tray.

  5. 5

Bake for 25 minutes until firm and lightly golden. Leave to cool for 10 minutes.

  6. 6

Lower the oven to 160°C (140°C fan). Slice each log on a slant into 1.5 cm slices with a sharp serrated knife. Lay the slices flat on the tray.

  7. 7

Bake for 10 minutes, turn them over and bake for 8 to 10 minutes more, until dry and golden. They crisp up as they cool.
