Method

  1. 1

Heat the oven to 150°C (130°C fan). Mix the paprika, sugar, garlic granules, onion granules, salt and pepper, and toss the pork belly cubes in the rub until evenly coated.

  2. 2

Spread the cubes on a rack over a baking tray and roast for 2 hours, until tender and the fat has rendered.

    120 min
  3. 3

Tip the cubes into a deep baking dish, discarding the fat. Pour over your ready made BBQ sauce (see the base recipe) and toss to coat.

  4. 4

Return to the oven, uncovered, at 180°C (160°C fan) for 40 minutes, stirring every 15 minutes, until the sauce is thick and sticky.

    40 min
  5. 5

Rest for 10 minutes. Eat with cocktail sticks or in rolls.

Tips

  • Keep the cubes the same size so they all cook evenly. Larger ones may need an extra 15 minutes.
  • Stirring every 15 minutes in the last stage stops the sauce burning on the base.
  • Drain off any fat before saucing, or the sauce will turn greasy and thin.

Storing and freezing

Keeps 3 days in the fridge, cooled within 2 hours. Freeze for up to 3 months and reheat until steaming hot all the way through.

Questions

What are burnt ends?

Burnt ends are cubes of smoked meat, traditionally beef brisket point, cooked until dark and caramelised at the edges. The oven pork belly version is a quick home cook take.

Can I use pork shoulder?

Yes. Cut into 4 cm cubes and roast for 2 hours 30 minutes before saucing. It is leaner than belly.

Is it gluten free and dairy free?

Yes. Pork, spices and the BBQ sauce from the base recipe are all gluten free, dairy free, egg free and nut free.
