Method

  1. 1

Heat the oven to 160°C (140°C fan). Score the pork rind in lines 1 cm apart, without cutting into the meat. Dry it well and rub 1 tsp of the salt into the rind. Sit it rind side up on a rack over a roasting tin and roast for 1 hour 15 minutes.

Meanwhile make the hogao. Heat the olive oil in a pan and cook the onion and spring onions for 5 minutes until soft. Add the garlic and cumin for 1 minute, then the tomatoes and a pinch of salt. Cook for 10 minutes, until thick and jammy. Scoop half into a bowl for serving.

  3. 3

Add the beans, carrot and 200 ml water to the rest of the hogao. Simmer for 25 minutes, mashing a few beans against the side of the pan, until thick and saucy. Season to taste.

  4. 4

Rinse the rice until the water runs clear. Heat 1 tbsp vegetable oil in a lidded pan, stir the rice for 1 minute, then add 550 ml water and 1/2 tsp salt. Bring to the boil, cover, and cook on the lowest heat for 12 minutes. Leave covered off the heat for 10 minutes.

  5. 5

Turn the oven up to 230°C (210°C fan) and roast the pork for 15 more minutes, until the rind is blistered and crackling. Rest it for 10 minutes, then slice.

  6. 6

Mix the cornmeal, 1/2 tsp salt and warm water and knead for 2 minutes into a soft, smooth dough. Rest for 5 minutes. Shape 8 discs, about 7 cm wide and 1 cm thick. Cook in a dry non-stick pan over a medium heat for 5 minutes on each side, until browned and hollow sounding when tapped.

    10 min
  7. 7

Fry the sausages in 1 tbsp vegetable oil over a medium-low heat for about 15 minutes, turning, until browned and cooked through.

    15 min
  8. 8

Halve the plantains lengthways and fry them in 1 tbsp oil for 2 to 3 minutes on each side, until deep golden. Drain on kitchen paper. Fry the eggs in the remaining oil.

  9. 9

Pile rice, beans, sliced pork, a sausage, plantain, a fried egg, avocado and 2 arepas on each plate. Spoon the reserved hogao over the top.
