Method

  1. 1

Rub the flour, cold butter and a pinch of salt together with your fingertips until it looks like coarse crumbs. Stir in the cheddar.

  2. 2

Add half the beaten egg and the iced water and mix to a dough. Split into two discs, one slightly bigger, wrap and chill for 45 minutes.

  3. 3

Toss the apples with the sugar, cornflour, cinnamon, nutmeg and lemon juice. Leave for 15 minutes so they release some juice.

  4. 4

Heat the oven to 200°C (180°C fan) with a baking tray inside. Roll out the bigger disc and line a 23 cm pie dish. Pile in the apples and dot with the butter.

  5. 5

Roll out the second disc, lay it over the top, trim, crimp the edges and cut four slits for steam. Brush with the rest of the egg.

  6. 6

Bake the pie on the hot tray for 20 minutes, then turn the oven down to 180°C (160°C fan) and bake for 40 minutes until deep golden and the juices bubble through the slits.
