Method

  1. 1

Heat the oven to 220°C (200°C fan) and line a large baking tray with baking paper.

  2. 2

Dust the worktop with the flour and roll out your ready made pizza dough (see the base recipe) to a rectangle about 30 x 40 cm.

  3. 3

Spread 100 ml of your basic tomato sauce (see the base recipe) over the dough, leaving a 2 cm border. Scatter with the cheese, then the pepperoni, sausage and oregano.

  4. 4

Roll up tightly from the long edge, pinching the seam and ends closed. Place seam side down on the tray.

  5. 5

Brush with the olive oil, then cut 4 small slits across the top to let steam out.

  6. 6

Bake for 25 minutes until deep golden and sounding hollow when tapped. Rest for 10 minutes.

  7. 7

Warm the rest of the tomato sauce in a pan until bubbling, slice the stromboli thickly and serve with the sauce for dipping.

    10 min

Tips

  • Do not overfill. Too much filling makes the roll burst in the oven.
  • Use low moisture mozzarella. Fresh mozzarella releases water and makes the dough soggy.
  • Let the stromboli rest before slicing or the cheese will pour out.

Storing and freezing

Keep slices in the fridge for up to 3 days and reheat in a hot oven for 10 minutes until steaming hot. Freeze slices for up to 2 months.

Questions

What is the difference between stromboli and calzone?

Stromboli is rolled up like a loaf and sliced. A calzone is folded into a half moon. Both use pizza dough, and stromboli is an Italian American invention.

Can I use shop bought dough?

Yes. Ready made pizza dough works well, and so does a pack of bread mix. Roll it out thinly so the loaf is not doughy in the middle.

Can I add vegetables?

Yes, but cook them first and pat dry. Peppers, mushrooms and spinach all work, as long as they are not wet.
