Method
- 1
Whisk the 2 egg whites with the salt to stiff peaks. Gradually whisk in the 200 g icing sugar until thick and glossy.
- 2
Set aside 3 tbsp of the meringue for the glaze. To the rest fold in the ground almonds, cinnamon and lemon juice to make a soft, sticky dough. Chill for 20 minutes.
20 min - 3
Heat the oven to 150°C (130°C fan). Line two trays with baking paper. Dust the work top with icing sugar and roll the dough 1 cm thick. Dip a star cutter in icing sugar and cut out stars.
- 4
Mix the reserved meringue with the third egg white, 100 g icing sugar and the lemon juice for the glaze. Brush a thick layer over each star.
- 5
Place on the trays and bake for 12 to 15 minutes, until the glaze is dry and the biscuits are just firm but still chewy inside.
14 min - 6
Cool on the trays then store in a tin. They get softer and more flavourful after a day or two.
