Method
- 1
Heat the oven to 200°C (180°C fan). Prick the potatoes, rub with a little oil and salt, and bake directly on the shelf for 1 hour to 1 hour 15 minutes, until the skin is crisp and the middle is soft.
70 min - 2
Meanwhile, heat the oil in a pan and fry the onion for 8 minutes. Add your ready made vindaloo paste (see the base recipe) and fry for 3 minutes.
11 min - 3
Add the tomatoes, chickpeas and 100 ml of water and simmer for 10 minutes until thick. Stir in the spinach until wilted.
10 min - 4
Split the potatoes, squeeze them open and fluff the insides with a fork.
- 5
Spoon the chickpea vindaloo over, then add the coconut yoghurt and pickled red onions.
Tips
- Bake potatoes straight on the oven shelf for the crispest skins.
- Fluff the middle with a fork before topping so the sauce soaks in.
- Make the chickpea vindaloo a day ahead. It improves overnight.
Storing and freezing
Keep the chickpea filling for 4 days in the fridge, cooled within 1 to 2 hours. Reheat until steaming hot all the way through and bake fresh potatoes when needed.
Questions
Can I microwave the potatoes?
Yes, to save time. Microwave for 8 to 10 minutes, then crisp in a hot oven for 10 minutes.
Is it vegan?
Yes. Use plain coconut yoghurt and every other ingredient is plant based.
Can I use other toppings?
Yes. Grated cheese, a fried egg or a spoon of mango chutney all go well, though they change the diet tags.
