Method
- 1
Peel the apples and cut a small slice off the base so they stand up. Use an apple corer or small spoon to scoop out the core, leaving the base intact. Rub with lemon juice to stop them browning.
- 2
Mix the walnuts, 3 tbsp sugar and vanilla, with 1 tbsp of water to bind. Fill each apple, pressing it in.
- 3
In a pan just big enough to hold the apples upright, bring the water, 150 g sugar, cinnamon stick, cloves and remaining lemon juice to a simmer.
- 4
Stand the apples in the pan, cover and poach gently for 20 to 25 minutes, until a knife slides in easily but they hold their shape.
23 min - 5
Lift the apples onto a plate. Boil the syrup hard for 8 to 10 minutes until reduced by half and slightly sticky. Strain and cool.
9 min - 6
Whip the cream to soft peaks. Serve the apples warm or chilled, with the syrup spooned over and a dollop of cream.
