Method

  1. 1

Butter a 20 cm square tin and line it with baking paper.

  2. 2

Put the sugar, butter, treacle, golden syrup, water and vinegar in a large heavy pan. Heat gently, stirring, until the butter has melted and the sugar has dissolved.

    5 min
  3. 3

Bring to the boil, then stop stirring. Boil steadily, swirling the pan occasionally, until a sugar thermometer reads 143C, the hard crack stage. This takes 20 to 25 minutes.

  4. 4

To check without a thermometer, drop a little into cold water. It should set at once and snap when you bend it.

  5. 5

Carefully pour into the tin and leave undisturbed for 15 minutes. Mark into squares with an oiled knife while still soft.

  6. 6

Leave to set completely for about 2 hours, then break along the lines, or tap with a rolling pin. Wrap in baking paper to keep from sticking.
