Method
- 1
Mix the flour, yeast, sugar and salt in a large bowl. Add the warm milk, egg yolks and 60 g melted butter and stir to a soft dough. Knead for 8 minutes until smooth and elastic.
8 min - 2
Cover and leave in a warm place for 1 hour, until doubled in size.
60 min - 3
Wrap 3 clean, empty 400 g tins in foil, then in greased baking parchment. Heat the oven to 200°C (180°C fan).
- 4
Divide the dough into 6 pieces and roll each into a rope about 60 cm long. Wind the rope round a tin from the top to the bottom, overlapping the edges slightly so it forms one tube. Stand them on a lined baking tray and brush with melted butter.
- 5
Bake the first 3 for 22 to 25 minutes until deep golden, turning once and brushing with more butter halfway. Mix the sugar and cinnamon on a plate.
23 min - 6
Roll each warm pastry in the cinnamon sugar and slide it off its tin. Repeat with the other 3 using the tins once cool. Serve warm.
