Method
- 1
Press the tofu between kitchen paper under a heavy pan for 15 minutes, then cut into cubes.
15 min - 2
Heat the oil in a non stick frying pan over a medium high heat. Fry the tofu for 8 minutes, turning, until golden on most sides. Sprinkle with the cumin and lift out.
8 min - 3
In a wide pan, warm your ready made korma base (see the base recipe) with the water until gently bubbling.
- 4
Add the green beans and simmer for 6 minutes until tender but still bright.
6 min - 5
Add the tofu and simmer for 3 minutes.
3 min - 6
Finish with lemon juice and coriander and serve with rice.
Tips
- Pressing the tofu removes water so it fries to a golden crust and soaks up sauce.
- Use extra firm tofu. Silken tofu breaks up completely in a curry.
- Add the tofu at the end so it stays crisp on the outside.
Storing and freezing
Keep in the fridge for up to 3 days. Reheat until steaming hot. The texture of tofu changes a little on freezing, so it is best fresh.
Questions
Can I bake the tofu instead?
Yes. Toss with 1 tbsp oil and bake at 200C for 25 minutes, turning halfway, for a lighter option.
Does tofu contain soya?
Yes. Tofu is made from soya, so avoid it for soya allergy and use chickpeas instead.
Can I use tempeh?
Yes. Steam it for 10 minutes, cube it and fry as for the tofu.
