Method

  1. 1

Boil the broad beans for 4 minutes, then drain and slip off the tough pale skins if you have time. The skins make the filling less smooth.

    4 min
  2. 2

Fry the garlic and the chopped chilli in 1 tbsp of the oil for 1 minute. Add the beans and mash roughly with a fork. Season with salt and set aside to cool.

  3. 3

Blend the tomatillos, the second chilli, coriander and lime juice with a pinch of salt to make a loose green salsa.

  4. 4

Mix the masa harina, salt and warm water into a soft dough. Rest it for 10 minutes under a damp cloth.

  5. 5

Divide the dough into eight balls. Press each into a 10 cm round, put a spoonful of bean filling in the middle, fold the dough over to seal and flatten into an oval about 1 cm thick.

  6. 6

Heat a dry heavy frying pan over a medium heat. Brush with a little oil and cook the tlacoyos for 4 to 5 minutes per side, until speckled brown and cooked through.

  7. 7

Top with salsa, sliced avocado and diced onion. Serve hot.
