Method
- 1
Dry roast the sesame seeds in a wide pan over a medium heat for 4 to 5 minutes, stirring, until they smell nutty and begin to pop. Do not let them brown. Tip into a bowl.
5 min - 2
Toast the desiccated coconut for 1 minute and add to the sesame seeds with the cardamom.
- 3
Melt the jaggery with the water in a pan over a low heat. Simmer for 4 to 5 minutes until it bubbles and a drop in cold water forms a soft ball you can roll between your fingers.
5 min - 4
Pour the syrup over the sesame mixture and stir quickly with a wooden spoon until everything is coated.
- 5
Let it cool for 2 to 3 minutes, then oil your palms and roll tablespoons of the mixture into tight balls while still warm.
- 6
Cool on a plate until firm. Store in a tin for up to 2 weeks.
