Method
- 1
Cook the rice noodles by the packet instructions, drain and rinse in cold water so they do not stick.
4 min - 2
Heat the oil in a large wok over a high heat. Fry the shiitake for 5 minutes without stirring too often, until browned.
5 min - 3
Add the carrot and pak choi stalks and stir fry for 2 minutes. Add the pak choi leaves and cook for 1 minute until just wilted.
3 min - 4
Pour in your ready made teriyaki sauce (see the base recipe) and let it bubble for 1 minute.
- 5
Tip in the noodles and toss for 1 to 2 minutes until hot and every strand is coated.
- 6
Divide between bowls and top with spring onions and sesame seeds.
Tips
- Do not stir the mushrooms constantly. Leaving them still for a minute at a time gives them golden edges and a deeper flavour.
- Dried shiitake, soaked for 30 minutes, work in place of fresh. Use the soaking water to loosen the sauce.
- Add cubes of pan fried tofu for more protein.
Storing and freezing
Best fresh. Keeps 1 day in the fridge, cooled within 1 hour. Reheat in a hot pan with a splash of water until steaming hot.
Questions
Can I use another noodle?
Yes. Soba (check for 100 percent buckwheat if gluten free), udon or egg noodles all work. Cook them by the packet instructions.
Is this gluten free?
Yes, with gluten free rice noodles and the tamari based teriyaki sauce from the base recipe. It is also vegan.
