Add your ready made tandoori marinade (see the base recipe) and mix well. Cover and chill for at least 3 hours, or overnight.
- 3
Heat the grill to its highest setting and thread the pork onto skewers, leaving small gaps. Brush with the oil.
- 4
Grill 8 cm from the heat for 12 to 15 minutes, turning every 4 minutes, until charred and cooked through with no pink inside and the juices clear.
13 min 30 s - 5
Rest the skewers for 5 minutes. Stir the yoghurt and mint together and serve alongside with the onion.
Tips
- Pork tenderloin stays tender but dries out fast. Do not cook it past 70 to 75C inside.
- Cut the pork into even cubes so every piece cooks in the same time.
- Rest the skewers before serving so the juices stay in the meat.
Storing and freezing
Cooked pork keeps for 3 days in the fridge, cooled within 1 to 2 hours. Reheat until steaming hot all the way through. Raw marinated pork can be frozen for 2 months.
