Method

  1. 1

Use your ready made tandoori marinade and tzatziki (see the base recipes). Mix the chicken with 150 g of the marinade, cover and chill for at least 1 hour, or up to 12 hours.

    60 min
  2. 2

Heat the oven grill to high, or a griddle pan until very hot. Line a tray with foil if grilling.

  3. 3

Cook the chicken with the oil for 10 to 12 minutes, turning once, until charred at the edges and cooked through with no pink meat.

    11 min
  4. 4

Warm the flatbreads in a dry pan or the oven for 30 seconds on each side.

  5. 5

Spread each flatbread with tzatziki. Add the lettuce, tomato and onion, then the hot chicken.

  6. 6

Squeeze over lemon, roll up tightly and serve.

Tips

  • Thigh meat stays juicy under fierce heat, where breast can dry out. Slice breast thicker if you use it.
  • Do not reuse leftover marinade that touched raw chicken as a sauce unless you boil it first.
  • Soak the onion slices in cold water for 5 minutes for a milder bite.

Storing and freezing

Keep cooked chicken and wraps apart in the fridge for up to 3 days. Reheat the chicken until steaming hot all the way through. Cooked chicken freezes for up to 2 months.

Questions

Can I make these gluten free?

Yes. Use gluten free flatbreads or serve the chicken and salad over rice. The chicken, tandoori marinade and tzatziki are gluten free.

How spicy are they?

They are mild to medium, with warmth from the spices rather than fierce heat. The tzatziki cools them down, and you can add sliced green chilli for more kick.

Can I use paneer or prawns instead?

Yes. Marinate paneer cubes for 30 minutes and grill for 8 minutes, or marinate prawns for 20 minutes and cook for 4 minutes until pink.
