Method

  1. 1

Make the fresh egg pasta dough (see the base recipe), rest it and roll it to about 1.5 mm. Cut into tagliatelle about 7 mm wide, dust with semolina and nest loosely.

  2. 2

Bring a large pan of salted water to the boil. Pat the prawns dry and season with salt and pepper.

  3. 3

Heat 2 tablespoons of the oil in a large frying pan over a high heat. Cook the prawns for 1 to 2 minutes each side, until pink and cooked through, then lift out onto a plate.

Lower the heat, add the last tablespoon of oil, the garlic and chilli and cook for 30 seconds. Add the tomatoes and cook for 3 minutes until they begin to collapse. Add the courgette ribbons and lemon zest and cook for 1 minute.

Toss the pasta into the pan with the prawns, lemon juice, parsley and a splash of pasta water. Toss for 1 minute until glossy, taste for seasoning and serve.

Tips

  • Cook the prawns very briefly and set them aside. Putting them back at the end stops them going tough.
  • Peel the courgette into ribbons so it softens in seconds and is soft and silky with the pasta.
  • If your pan is small, cook the prawns in two batches. Overcrowding steams them rather than searing.

Storing and freezing

Best eaten fresh. Keep leftovers in the fridge for up to 1 day and reheat until steaming hot all the way through. Do not freeze the finished dish.

Questions

Can I use frozen prawns?

Yes. Thaw them completely in the fridge overnight, drain and pat dry before cooking. Wet prawns steam rather than sear.

Is this dairy free?

Yes. It is made with olive oil and has no butter, cream or cheese. It contains egg, wheat and shellfish, so check any allergies before serving.

Can I use a different fish?

Yes. Chunks of firm white fish or scallops work well. Cook them as for the prawns and add them back at the end.
