Method

  1. 1

Heat the oven to 220°C (200°C fan). Toss the cauliflower florets with the oil and your ready made al pastor marinade (see the base recipe) until evenly coated.

  2. 2

Spread on a large baking tray in one layer. Roast for 25 minutes, turning once, until tender and charred at the edges.

    25 min
  3. 3

Add the pineapple wedges to the tray for the last 10 minutes of cooking, until caramelised at the edges.

    10 min
  4. 4

Roughly chop the cauliflower and pineapple together on a board.

  5. 5

Warm the ready made corn tortillas (see the base recipe) in a dry pan.

  6. 6

Fill with the cauliflower and pineapple, onion and coriander. Serve with lime and your ready made salsa taquera (see the base recipe).

Tips

  • Cut the florets to a similar size so they roast evenly. Smaller pieces catch and char better.
  • Do not crowd the tray. Use two trays if needed so the cauliflower roasts rather than steams.
  • Cauliflower soaks up the marinade well, so no long marinating is needed.

Storing and freezing

Keep leftovers in the fridge for up to 3 days. Reheat until steaming hot all the way through.

Questions

Is this vegan?

Yes. Cauliflower, the plant based marinade and corn tortillas contain no animal products. Check the label on any achiote paste you use.

Can I use another vegetable?

Yes. Oyster mushrooms, king oyster mushrooms or thick slices of squash all work well.

Is it very hot?

The marinade is mild and fruity. The heat comes from the salsa taquera, which you can add to taste.
