    3 min
  3. 3

Warm the tortillas in a dry pan.

  4. 4

Fill with cabbage and spoon in the prawns and sauce.

  5. 5

Top with your ready made pickled red onions (see the base recipe) and serve with lime wedges.

Tips

  • Do not overcook prawns or they turn rubbery.
  • Pat prawns dry so they sear instead of steam.
  • Cut the heat with a squeeze of lime.

Storing and freezing

Best fresh. Cooked prawns keep 1 day in the fridge, cooled within 1 hour. Reheat once until steaming hot.

Questions

How hot is a la diabla?

Very, it means devilled. Use less sauce for a milder taco.

Can I use cooked prawns?

Yes, add them for the last 2 minutes just to heat through.

Can I use frozen prawns?

Yes, defrost fully in the fridge overnight and pat dry.
