Method

  1. 1

Soak or cook the rice noodles following the packet, usually 5 to 8 minutes, then drain and rinse. Toss with the sesame oil so they do not stick.

    7 min
  2. 2

Heat 1 tbsp of the vegetable oil in a wok over a high heat. Fry the mushrooms in a single layer for 5 minutes without stirring too often, until well browned. Tip on to a plate.

    5 min
  3. 3

Add the remaining oil and stir fry the pepper for 2 minutes, then the pak choi for 1 minute.

    3 min
  4. 4

Return the mushrooms with the tamari and your ready made sweet and sour sauce (see the base recipe). Bubble for 1 minute.

  5. 5

Add the noodles and toss gently for 1 to 2 minutes until coated and hot.

  6. 6

Divide between bowls, scatter over the spring onions and serve with lime wedges.

Tips

  • Do not salt the mushrooms early. Let them brown first, then season.
  • Rinse the noodles under cold water after draining. It stops them clumping into a block.
  • Add tofu or edamame for extra protein.

Storing and freezing

Best eaten fresh. Keeps up to 2 days in the fridge, cooled within 1 hour. Reheat with a splash of water until steaming hot.

Questions

Which rice noodles should I buy?

Medium or flat rice noodles, often sold as pad Thai noodles. Thin vermicelli works too but needs only 3 to 4 minutes.

Is it vegan?

Yes. All ingredients are plant based. It is also gluten free, dairy free, egg free and nut free, but check the noodle label for traces.

Can I add other vegetables?

Yes. Carrot, mangetout, baby corn, beansprouts and courgette are all good. Add beansprouts at the very end.
