Method
- 1
Rub the five spice and black pepper all over the ribs. Mix the tamari, 2 tbsp of the honey, the vinegar, tomato purée, ginger, garlic and water in the pot.
- 2
Stand a trivet in the pot if you have one, or just pile the ribs into the sauce, standing them upright in a ring if you can. Lock the lid and set the valve to sealing.
- 3
Cook at high pressure for 25 minutes. It will take about 10 minutes to come up to pressure first.
25 min - 4
Leave the pressure to drop for 10 minutes (natural release), then open the valve to release the rest. A long natural release keeps the meat from tightening. Open the lid away from your face.
10 min - 5
Carefully lift the ribs onto a lined baking tray, they will be very tender. Heat the grill to high. Use Sauté to boil the sauce hard for 8 minutes until syrupy, then stir in the remaining honey and the sesame oil.
8 min - 6
Brush the ribs with the thick sauce and grill for 5 to 8 minutes, turning once, until sticky and charred at the edges. Brush again and scatter over the spring onions and sesame seeds.
7 min - 7
No pressure cooker? Put the ribs and sauce in a heavy pan with a lid and simmer gently for 1 hour 30 minutes, turning now and then, topping up with a splash of water if needed. Then reduce and grill as above.
