Method
- 1
Heat the oven to 170°C (150°C fan). Grease and line a 23 cm springform tin with baking paper.
- 2
Melt the 150 g chocolate in a bowl over a pan of barely simmering water. Stir until smooth and leave to cool for 10 minutes.
10 min - 3
Beat the butter and icing sugar for 4 minutes until pale and fluffy. Beat in the egg yolks one at a time, then the vanilla and the cooled chocolate.
- 4
Whisk the egg whites with the salt until they hold soft peaks. Add the caster sugar a spoonful at a time and whisk until stiff and glossy.
- 5
Fold a third of the whites into the chocolate mixture to loosen it. Fold in the flour, then gently fold in the rest of the whites. Spoon into the tin and level the top.
- 6
Bake for 50 minutes, until a skewer comes out with just a few moist crumbs. Cool in the tin for 15 minutes, then turn out onto a rack and cool completely.
50 min - 7
Warm the jam with 1 tbsp water until runny and sieve it. Slice the cake in half, spread a third of the jam in the middle and sandwich it back together. Brush the rest over the top and sides.
- 8
Heat the cream until steaming, pour over the chopped glaze chocolate and stir in the butter until glossy. Cool for 10 minutes, pour over the cake, and leave to set for 1 hour before slicing.
