Method
- 1
Put the rice, milk, vanilla pod and its seeds in a pan. Bring to a gentle simmer and cook for 30 to 35 minutes, stirring often, until the rice is soft and the milk is absorbed.
33 min 20 s - 2
Stir in the 40 g sugar, remove the vanilla pod and tip the rice into a bowl. Cool completely, then chill for at least 1 hour.
- 3
Whip the cream to soft peaks. Fold it into the cold rice with the chopped almonds. Spoon into a serving bowl or 6 glasses and keep chilled.
- 4
For the sauce, put the cherries, 50 g sugar and 50 ml of the water in a pan. Simmer for 8 minutes until the cherries are soft and juicy.
8 min - 5
Mix the cornflour with the remaining 50 ml water, stir it in and cook for 1 minute until glossy.
- 6
Serve the cold rice pudding with the warm cherry sauce spooned over. Tradition says to hide one whole almond for a lucky winner.
