Tips

  • Keep the noodles separate until serving so they do not turn soft in the broth.
  • If you use stock cubes instead of homemade stock, check they are gluten free: many contain wheat.
  • Add the prawns at the end so they stay juicy.

Storing and freezing

Store the broth and noodles separately in the fridge for up to 1 day. Reheat the broth until steaming hot all the way through. Do not freeze with prawns.

Questions

Can I use chicken instead of prawns?

Yes, use 250 g thin strips of chicken breast and simmer for 6 minutes until cooked through.

Is it very spicy?

Medium. Use 60 g of paste for a mild soup and add chilli oil at the table for more.

Can I use egg noodles?

Yes, but they contain wheat and egg, so it will no longer be gluten free.
