Method
- 1
Mix the flour, yeast, salt, 1 tbsp sugar and aniseed in a large bowl. Add the olive oil and the warm water and stir to a soft, sticky dough.
- 2
Knead on a lightly floured surface for 10 minutes until smooth and elastic. Put in an oiled bowl, cover and leave somewhere warm for 1 hour, until doubled in size.
60 min - 3
Divide the dough into 8 pieces. Roll each into a rope about 30 cm long and join the ends to make a ring, pinching firmly. Place on two lined baking trays and leave to rise for 30 minutes.
30 min - 4
Heat the oven to 220°C (200°C fan). Stir the 1 tsp sugar into the 2 tbsp warm water and brush it over the rings. Press on the sesame seeds.
- 5
Bake for 20 minutes until deep golden and hollow-sounding when tapped underneath. Swap the trays halfway.
20 min - 6
Cool on a wire rack. Best the same day, or toast the next day.
