Method
- 1
Boil the 400 g potatoes whole until tender, about 20 minutes. Drain, steam dry and mash very smooth. Leave to cool.
20 min - 2
Fry half the onion in 1 tbsp oil for 8 minutes until soft. Add the pork mince, marjoram, pepper and a little salt. Cook for 10 minutes, breaking it up, until cooked through. Cool.
10 min - 3
Finely grate the raw potatoes. Squeeze them hard in a clean tea towel to remove as much liquid as you can. Let the squeezed liquid settle and pour off the water, keeping the white starch at the bottom.
- 4
Mix the grated potato with the mash, the settled starch, the potato starch, egg and 1 tsp salt to make a soft, workable dough.
- 5
Take a golf ball of dough, flatten it in your wet palm, add a spoon of filling and close up into a ball with the seam hidden.
- 6
Slide the dumplings into a large pan of gently simmering salted water. Cook for 10 minutes once they float. Meanwhile, fry the remaining onion in 2 tbsp oil for 10 minutes until golden.
10 min - 7
Drain well and serve topped with fried onion and dill.
