Method

  1. 1

Peel and chop the potatoes into even chunks. Boil them in salted water for 15 minutes, until a knife slides in easily.

    15 min
  2. 2

Pat the chops dry and season both sides. Heat the oil in a large frying pan over a medium high heat and fry the chops for 4 to 5 minutes on each side, until golden and cooked through with no pink and the juices running clear.

    9 min
  3. 3

Move the chops to a warm plate, cover with foil and rest for 5 minutes.

    5 min
  4. 4

Tip the fat out of the pan, leaving the sticky bits. Add 300 ml of your ready made onion gravy (see the base recipe) and any resting juices. Scrape up the browned bits and simmer for 3 minutes until steaming hot all the way through.

    3 min
  5. 5

Boil the green beans for 4 minutes until just tender, then drain.

    4 min
  6. 6

Drain the potatoes and mash with the dairy free spread and rice milk. Stir in the spring onions and season well.

  7. 7

Serve the chops on the mash with the green beans, and spoon the hot gravy over.

Tips

  • Take the chops out of the fridge 15 minutes before cooking so they cook evenly and stay juicy.
  • Do not wash the pan before adding the gravy. The browned bits stuck to it add roasted flavour.
  • For a dairy version, swap the spread and rice milk for butter and whole milk.

Storing and freezing

Keep leftovers covered in the fridge for up to 2 days. Reheat the chop and mash until steaming hot all the way through. The gravy alone freezes for 3 months.

Questions

Is this pork chop dinner gluten free?

Yes, as long as your ready made onion gravy was made with gluten free stock and Worcestershire sauce, as the base recipe describes. The chops, mash and beans contain no gluten.

How do I stop pork chops drying out?

Do not overcook them. Fry for about 4 to 5 minutes a side, check there is no pink and the juices run clear, then rest for 5 minutes. Thicker bone in chops may need a few extra minutes.
