Method

  1. 1

Melt half the butter with the olive oil in a large non stick pan. Fry the onion for 4 minutes until soft, then add the chicken and cook for 5 minutes until white and cooked through.

  2. 2

Add the peas and the cold rice, breaking up any lumps. Stir fry for 3 minutes until hot.

  3. 3

Stir in the 4 tbsp ketchup, the salt and pepper and cook for 2 minutes until the rice is evenly red-orange. Divide between 2 plates, shaping each into a rugby ball.

    2 min
  4. 4

Beat the eggs with the milk. Melt a quarter of the remaining butter in a clean non stick pan over a medium heat and pour in half the egg.

  5. 5

Stir gently with a spatula for about 30 seconds until just softly set but still glossy on top. Stop and let it set for 20 seconds.

  6. 6

Slide the omelette over the rice, or fold it round. Repeat with the remaining butter and egg for the second one.

  7. 7

Squeeze the extra ketchup over the top in a zigzag and eat at once.
